Oven-Roasted Potatoes
Ingredients:

2-3 Tbsp. olive oil

3 Tbsp. Dijon Mustard

2-3 cloves garlic, crushed

8-12 potatoes, peeled and cut into 1/2" cubes

Salt and pepper to taste
Preheat the oven to 375º
Oil a large baking sheet.
Blend together the olive oil, Dijon mustard, garlic, salt and pepper in a small bowl
Rinse the potatoes and pat them dry. Put in a large bowl.
Add the olive oil mixture to the potatoes and mix thoroughly
Spread the potatoes in a single layer on the oiled baking sheet.
Bake at 375º for 20-30 minutes. Set a timer for 8-minute intervals, and each 8 minutes toss the potatoes to get all sides evenly brown.
Remove from oven and place in a large serving bowl. Toss with additional salt to taste.
