Oven-Roasted Potatoes


  1. Preheat the oven to 375º

  2. Oil a large baking sheet.

  3. Blend together the olive oil, Dijon mustard, garlic, salt and pepper in a small bowl

  4. Rinse the potatoes and pat them dry.  Put in a large bowl.

  5. Add the olive oil mixture to the potatoes and mix thoroughly

  6. Spread the potatoes in a single layer on the oiled baking sheet.

  7. Bake at 375º for 20-30 minutes.  Set a timer for 8-minute intervals, and each 8 minutes toss the potatoes to get all sides evenly brown.

  8. Remove from oven and place in a large serving bowl.  Toss with additional salt to taste.
